- Preheat your air fryer to 300°F.
- Combine garlic powder, garlic salt, ground mustard, ginger, nutmeg, black pepper, allspice, baking soda, and cayenne pepper in a large mixing bowl. Whisk together until evenly blended.
- Prepare the chicken wings by cutting them into sections. Use a sharp knife to locate the joints and separate each wing into three parts: the tip, wingette (flat), and drumette. Discard the wing tips or save them for stock.
- Pat the wingettes and drumettes completely dry with paper towels to remove excess moisture, which helps achieve crispier skin.
- Add the dried wing pieces to the bowl with the spice mixture and toss thoroughly until all pieces are evenly coated.
- Lightly spray or brush the air fryer basket with oil to prevent sticking.

- Air fry at 300°F for 15 minutes.
- Increase the temperature to 400°F and continue cooking for 20 to 25 minutes, flipping the wings halfway through, until they're golden brown and the internal temperature reaches 165°F.
- Remove the first batch and keep warm while you repeat the cooking process with any remaining wings.
- Cook until the thickest piece reaches 165F and the juices run clear.
- Serve hot with your choice of dipping sauce on the side, if desired.
