- 8 oz broccoli florets, (cut into bite-sized pieces)
- 8 oz cauliflower florets, (cut into bite-sized pieces)
- 2 oz red bell pepper (1/2 of a pepper), (small dice)
- 4 oz cheddar cheese, (cubed)
- ⅓ pound bacon, (cooked crisp and crumbled)
- 2 tbsp purple onion (or green onion)
- ¾ cup mayonnaise
- ¾ cup sour cream (or full-fat Greek yogurt)
- 2 tbsp low carb powdered sugar
- 1 tbsp fresh lemon juice

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Cook the diced bacon in a frying pan over medium heat until crisp, about 6 minutes, then drain and set aside.
- 2. While the bacon cooks, wash and cut the broccoli and cauliflower into bite-sized pieces, dice the red bell pepper and onion, and cube the cheddar cheese, placing everything in a large bowl.
- 3. Whisk together the mayonnaise, sour cream, powdered sugar, and lemon juice in a medium bowl, tasting to adjust seasoning as desired.
- 4. Add the bacon to the vegetables and cheese, pour the dressing over top (using as much as you prefer), and toss everything together.
- 5. Serve immediately or refrigerate up to 5 days.
