- 1 ripe avocado
- 1 (8 oz) ball of fresh mozzarella, sliced into 8 rounds
- 1 large tomato, cut into 4 slices horizontally
- 2 teaspoon extra virgin olive oil
- black pepper
- 4 tbs sliced fresh basil leaves

- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Slice the avocado horizontally across the middle to create rings, remove the skin from the stone-free half, and cut into four rounds; carefully remove the stone from the other half and repeat.
- 2. Cut the mozzarella ball into 8 rounds and slice the tomato horizontally into 4 slices.
- 3. Build stacks on each tomato slice by alternating mozzarella and avocado rounds, starting with the largest pieces.
- 4. Transfer the stacks to two serving plates, drizzle with extra virgin olive oil, season generously with black pepper, and garnish with sliced fresh basil.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
