6 servings- 8 slices thick bacon, cut crosswise into short strips
- 1 lb mushrooms, washed if needed and cut into thick slices
- 1 cup crumbled Feta cheese
- coarse ground black pepper to taste
- 1 tsp Spike seasoning, or any seasoning blend you like with eggs
- 8 eggs, beaten well
- ½ cup heavy cream (see notes)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat your oven to 350°F and coat a 9 to 9.5-inch glass or ceramic pie dish with nonstick spray.
- 2. Cook the bacon strips in a hot skillet until crispy and well-browned, then drain on paper towels and spread most of it in the pie dish, saving some for topping.
- 3. Brown the sliced mushrooms in the bacon fat over medium-high heat until cooked through and beginning to caramelize.
- 4. Layer the cooked mushrooms over the bacon, then scatter most of the crumbled feta on top, reserving a bit for garnish.
- 5. Season with black pepper and Spike seasoning or your preferred egg seasoning blend.
- 6. Whisk the eggs together with the heavy cream, pour over the layered ingredients, and gently stir with a fork to distribute evenly.
- 7. Sprinkle the reserved bacon and feta over the surface and bake for 35-45 minutes until the center is set and the top is lightly browned.
- Cook eggs just until set so they stay tender instead of rubbery.
- 8. Serve warm; leftovers keep refrigerated for several days and reheat well in the microwave or stovetop.
