Cooking cue
Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 325 degrees, then rinse the brisket and pat it completely dry after removing it from its packaging.
- 2. Place the brisket fat-side up in a Dutch oven, add the wine, and scatter the spice packet contents over the meat; cover and braise at 325 degrees for 3 hours, checking liquid levels after 2 hours and adding more wine, broth, or water if the pot looks dry.
- 3. Tuck the cabbage wedges around the brisket, cover again, and continue cooking for 30 minutes until the cabbage is tender.
- 4. Whisk together the Dijon mustard and sugar-free maple syrup, then remove the pot from the oven and set the cabbage aside.
- 5. Brush the mustard-maple mixture generously over all surfaces of the brisket, position the oven rack close to the broiler element, and broil uncovered on high for 3-4 minutes to caramelize the glaze.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 6. Let the brisket rest for 20-30 minutes before slicing and serving with the cabbage.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
