- 2 lb Pork tenderloins ((2 pieces; cut away the gray connective tissue on the underside, if any))
- 2 tsp Sea salt
- ½ tsp Black pepper
- 5 tbsp Olive oil ((divided into 1/4 cup and 1 tbsp))
- 8 cloves Garlic ((pressed with a garlic press))
- 2 tbsp Fresh rosemary ((chopped; ~5-6 sprigs))
- 2 tsp Italian seasoning
- 1 tsp Lemon zest ((from 1 lemon))

Cook pork to 145F, then rest it for 3 minutes before slicing.
- 1. Preheat your oven to 400 degrees F and pat the tenderloins completely dry with paper towels.
- 2. Whisk together 1/4 cup olive oil, pressed garlic, chopped rosemary, Italian seasoning, and lemon zest, then brush this mixture all over the pork.
- 3. Season both sides with salt and black pepper, and if time allows, let the meat rest at room temperature for 30 minutes.
- 4. Heat the remaining 1 tablespoon olive oil in a cast iron skillet over medium-high heat, then sear the pork for 2-4 minutes per side until deeply browned.
- 5. Use tongs to hold each side of the tenderloins against the skillet for 20-30 seconds to brown the edges.
- 6. Transfer the skillet to the oven and roast for 5-10 minutes until the internal temperature reaches 140-145 degrees F.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 7. Move the pork to a cutting board and let it rest for 5 minutes before slicing, allowing the temperature to climb another 5 degrees.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
