- 1 cup (tightly packed) fresh basil leaves, washed and dried well
- ½ cup (or less for stronger basil flavor) best quality extra virgin olive oil
- ¾ cup low-sugar vinaigrette dressing (see notes)
- ¼ cup chopped basil puree (see below) or Fresh-Frozen Basil (see notes)

- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Trim basil leaves from stems using kitchen shears, wash thoroughly, and dry completely in a salad spinner or with paper towels.
- 2. Measure one tightly packed cup of basil leaves and place in a food processor with 1/2 cup extra virgin olive oil.
- 3. Process until basil is finely chopped and fully coated with oil.
- 4. Combine 1/4 cup of the basil puree with 3/4 cup low-sugar vinaigrette dressing to make the finished vinaigrette.
- 5. Freeze any extra basil puree for future batches, or for a simpler version just finely chop fresh basil with a knife and stir into vinaigrette; store the finished dressing in the refrigerator for up to a week or slightly longer.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
