- 1 large Onion ((chopped))
- 1 lb Ground beef
- 1 tsp Sea salt
- ¼ tsp Black pepper
- 1 lb Shredded coleslaw mix ((or chopped cabbage))
- 1 15-oz can Diced tomatoes ((with liquid))
- 6 cups Beef bone broth ((or any broth - beef, chicken, or vegetable))
- 1 tbsp Italian seasoning
- ½ tsp Garlic powder ((or more if you love garlic))
- 2 medium Bay leaves ((optional))

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Heat avocado oil in a Dutch oven or large pot over medium heat, add chopped onion, and cook for 5-10 minutes, stirring occasionally, until the onions begin to brown.
- 2. Add ground beef, season with sea salt and black pepper, increase heat to medium-high, and cook for 8-10 minutes, breaking apart with a spatula until fully cooked.
- 3. Stir in the coleslaw mix or cabbage, diced tomatoes with liquid, bone broth, Italian seasoning, garlic powder, and bay leaves, then season with additional salt and pepper to taste.
- 4. Bring the soup to a boil over high heat, then reduce heat and simmer for 30-60 minutes until flavors are well developed.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Remove bay leaves before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
