- 1 ½ cups almond flour
- ½ cup coconut flour
- ⅓ cup low carb sugar substitute (or brown sweetener)
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ¼ cup butter (chilled)
- 1 cup blueberries (fresh or frozen)
- ⅓ cup heavy cream
- ⅓ cup unsweetened almond milk
- 2 eggs
- ½ teaspoon blackstrap molasses (optional)
- ¼ cup Swerve Confectioners Powdered Sweetener
- ¼ teaspoon vanilla extract
- 2-3 teaspoons lemon juice

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Combine almond flour, coconut flour, sweetener, baking powder, and salt in a bowl.
- 2. Cut the chilled butter into the dry mixture until crumbly, then fold in blueberries to coat them.
- 3. Whisk together molasses, cream, almond milk, and eggs in a separate bowl.
- 4. Pour the wet ingredients into the dry mixture and stir just until dough forms, adding more coconut flour if needed.
- 5. Divide dough in half, shape each portion into a ball, then flatten into a circle and cut each circle into 6 triangles.
- 6. Bake at 375°F for 15-20 minutes until golden.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Cool for 15 minutes, transfer to a cooling rack, then drizzle with a glaze made from powdered sweetener, vanilla, and lemon juice if desired.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
