12 servings- 1 medium head cauliflower, cut into 1-inch florets (about 6 cups)
- ½ cup shredded part-skim mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup shredded cheddar cheese
- 1 large egg
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh parsley
- 1 garlic clove, minced
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 Marinara sauce for serving (optional)

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- Heat your oven to 425°F and line a baking sheet with parchment paper.
- Working in batches to avoid overfilling, add the cauliflower florets to a food processor and pulse until finely ground into rice-sized pieces.
- Transfer the ground cauliflower to a microwave-safe bowl, cover, and microwave on high for 8 minutes until tender.
- Allow the cauliflower to cool until you can handle it comfortably, then wrap it in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. Return the dried cauliflower to the bowl.
- In a separate bowl, combine the mozzarella, Parmesan, and cheddar cheeses. Mix half of this cheese blend into the cauliflower and set the remaining half aside.
- In a small bowl, whisk together the egg, basil, parsley, minced garlic, salt, and pepper. Fold this mixture into the cauliflower until well combined.
- Transfer the cauliflower mixture to your prepared baking sheet and shape it into an 11x9-inch rectangle with even thickness.
- Bake for 20 to 25 minutes until the edges turn golden brown and the base is set.
- Remove from the oven and sprinkle the reserved cheese mixture evenly over the top. Return to the oven and bake for another 10 to 12 minutes until the cheese is melted and bubbly.
- Cook eggs just until set so they stay tender instead of rubbery.
- Let cool for a few minutes, then slice into 12 breadsticks. Serve warm with marinara sauce for dipping if desired.

Make sure to squeeze the cauliflower very dry after microwaving to prevent soggy breadsticks. The drier the cauliflower, the better the texture. You may need to process the cauliflower in 2-3 batches depending on your food processor size. Marinara sauce for dipping is optional but recommended.
