- 3 cups raw cauliflower, florets
- 4 cloves garlic
- ¼ cup avocado or olive oil, divided
- ¼ cup lemon juice
- ¼ cup tahini
- ¼ cup warm water
- ¾ tsp italian seasoning
- ½ tsp pink salt
- ½ tsp ground cumin
- ¼ tsp black pepper
- paprika and olive oil (garnish)

- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 400°F, then toss cauliflower florets and garlic cloves with 1 tablespoon avocado oil on a baking tray and roast for 15-20 minutes. Let cool.
- 2. Add the roasted cauliflower and garlic to a blender or food processor along with the remaining oil, lemon juice, tahini, warm water, Italian seasoning, salt, cumin, and black pepper.
- 3. Blend until mostly smooth, adding more water or oil as needed to reach your preferred consistency.
- 4. Taste and adjust seasonings, then transfer to a serving bowl and garnish with a drizzle of olive oil and paprika.
