- 1 10 oz pkg. frozen cauliflower rice (see notes)
- 5 tsp olive oil, divided
- one 19.5 oz. pkg. uncooked Italian Sausage (see notes)
- 1 lb mushrooms, chopped
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 tsp Italian Herb Blend
- ½ tsp ground fennel (see notes)
- salt and fresh-ground black pepper to taste
- 2 cup grated Mozzarella cheese
- 3 green onions to garnish (optional)

- 1. Preheat your oven to 375°F and spray an 8x11-inch casserole dish with nonstick spray, then remove the frozen cauliflower rice from the freezer to thaw.
- 2. Chop the mushrooms, onion, and green bell pepper into bite-sized pieces.
- 3. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat, cook the sausage until nicely browned while breaking it apart with a potato masher, then transfer to a bowl.
- 4. Add 1 teaspoon oil to the same pan and cook the mushrooms until their liquid evaporates, then add them to the bowl with the sausage.
- 5. Heat the remaining 2 teaspoons oil in the pan, cook the onions and green pepper until just starting to brown, then stir in the Italian herbs and ground fennel and cook 2 minutes more.
- 6. Add the thawed cauliflower rice to the pan with the vegetables, heat for a couple of minutes, season with salt and pepper, then stir in the cooked sausage, mushrooms, and 1 cup of the mozzarella.
- 7. Transfer the mixture to the prepared casserole dish, top with the remaining cup of cheese, and bake for about 25 minutes until the top is lightly browned, then garnish with sliced green onions if desired.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
