- 1 cup cherry tomatoes, cut in quarters and then drained in a colander
- 1 cup zucchini, diced small (see notes)
- ⅓ cup thinly-sliced green onion
- ½ cup coarsely grated Parmesan cheese
- ½ cup grated Mozzarella cheese
- 1 C Carbquik Low-Carb Baking Mix (see notes)
- ½ tsp dried oregano
- ½ tsp salt (or less, to taste)
- ½ tsp black pepper
- ½ cup half and half (see notes)
- 2 eggs

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 375°F and spray a glass pie dish with non-stick spray.
- 2. Quarter the cherry tomatoes and place in a colander to drain. Cut zucchini lengthwise into 6-8 thin strips, trim away excess white center, then dice into small cubes. Slice green onions, reserving some for garnish.
- 3. Pat the drained tomatoes dry with paper towels.
- 4. In a bowl, combine the zucchini, tomatoes, green onions, Parmesan cheese, and Mozzarella cheese.
- 5. In a separate bowl, mix Carbquik with oregano, salt, and pepper. In another bowl, beat the eggs and whisk in the half and half until well combined.
- 6. Gradually stir the egg mixture into the Carbquik mixture until smooth.
- 7. Either pour the Carbquik mixture over the vegetables in the pie dish or combine everything in a bowl first, then transfer to the pie dish. Stir gently until well combined.
- 8. Bake for 30-35 minutes until the top is nicely browned and a toothpick inserted in the center comes out clean.
- Cook eggs just until set so they stay tender instead of rubbery.
- 9. Serve hot or warm, garnished with reserved sliced green onions. Refrigerate leftovers for several days and reheat as needed.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
