- 1. Preheat your oven to 350°F and line 8 cups of a standard muffin tin with paper liners, then spray them with cooking spray.
- 2. In a medium bowl, combine the mashed banana, coconut flour, eggs, sweetener, melted coconut oil, baking powder, and vanilla, stirring until the batter is smooth.
- 3. Fold in any optional mix-ins like nuts, berries, or chocolate chips if using.
- 4. Divide the batter evenly among the 8 prepared muffin cups.
