- 2 tablespoons coconut flour
- 2 tablespoons golden flax meal
- ¾ cup water
- pinch salt
- 1 large egg (beaten)
- 2 teaspoons butter (or ghee)
- 1 tablespoon heavy cream (or coconut milk)
- 1 tablespoon Low carb brown sugar (or your favorite sweetener)

Cook eggs just until set so they stay tender instead of rubbery.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Combine the coconut flour, flax meal, water, and salt in a small pot over medium heat, stirring until the mixture simmers, then reduce to medium-low and whisk until it begins to thicken.
- 2. Remove from heat and whisk in the beaten egg in two additions, whisking continuously, then return to heat and continue whisking until the porridge thickens.
- 3. Remove from heat and whisk for about 30 seconds, then stir in the butter, cream, and sweetener.
- Cook eggs just until set so they stay tender instead of rubbery.
- 4. Serve with your favorite toppings.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
