- ¾ cup Heavy cream
- ¾ cup Parmesan
- ¼ cup Sun-dried tomatoes
- 5 oz Spinach
- 4 cloves Garlic
- ¼ cup Fresh basil
- 1 tbsp Olive oil

Cook shrimp just until pink and opaque so they stay juicy.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- Season the shrimp and sear quickly in olive oil until just pink, then transfer to a plate.
- Saute garlic and chopped sun-dried tomatoes, then add cream and Parmesan and simmer until silky.
- Cook shrimp just until pink and opaque so they stay juicy.
- Fold in spinach, return the shrimp to the pan, and finish with basil before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
