- 1 cup sliced fresh mushrooms
- 1 tablespoon canola oil
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- ⅔ cup finely chopped fully cooked ham
- 5 large eggs
- 3 cups shredded Muenster or Monterey Jack cheese
- ⅛ teaspoon black pepper
- 1 tbsp Butter

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat your oven to 350°F. Grease a 9-inch pie plate or quiche dish with butter or cooking spray and set aside.
- Heat the canola oil in a large skillet over medium heat. Add the chopped onion and sliced mushrooms, cooking for 5-7 minutes until the vegetables are tender and any liquid has evaporated.
- Stir in the well-drained spinach and chopped ham. Continue cooking for another 3-4 minutes, stirring occasionally, until all moisture has cooked off from the pan. Remove from heat and let the mixture cool for about 5 minutes.
- In a large mixing bowl, beat the eggs until well combined. Add the shredded cheese and black pepper, stirring to distribute evenly.
- Fold the cooled vegetable and ham mixture into the egg and cheese mixture, stirring until everything is evenly incorporated.
- Pour the entire mixture into your prepared pie plate, spreading it out evenly.
- Bake for 40-45 minutes, until the quiche is set in the center and a knife inserted into the middle comes out clean. The top should be lightly golden.
