- ¼ cup onion (diced)
- 6 large eggs
- ¼ cup whipping cream
- ½ tsp salt
- ¼ tsp pepper
- 4 ounces cheddar cheese (grated)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 350°F and line a 12-cup muffin pan with silicone liners.
- 2. Melt butter in a large skillet over medium heat, add diced ham, and cook for about 2 minutes until browned and crispy.
- 3. Stir in the chopped bell peppers and onion, cooking for 4 minutes more until tender, then let cool for at least 15 minutes.
- 4. Whisk eggs with cream, salt, and pepper in a large bowl, then stir in the cooled ham mixture and grated cheddar.
- 5. Divide the mixture evenly among the muffin cups and bake for about 30 minutes until puffed and golden brown.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Cool for at least 10 minutes before removing from the pan.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
