- 1 red bell pepper
- 7 oz chorizo
- 2 garlic cloves
- 3 cups riced cauliflower
- 2 teaspoon paprika (smoked or regular)
- 1 teaspoon onion granules (or powder)
- ½ teaspoon ground turmeric
- ½ cup chicken bone broth
- 6 tablespoon mayonnaise (no added sugar)
- 16 oz large shrimp, peeled and deveined
- 8 oz chopped asparagus
- 2 tablespoon extra-virgin olive oil
- Chopped Italian parsley (to garnish)
- 8 oz calamari rings (optional)

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Slice the red bell pepper into small strips, mince the garlic, and chop the asparagus into one-inch pieces after removing woody ends.
- 2. Heat 1 tablespoon olive oil in a large pan over medium-high, add bell pepper, asparagus, and chorizo, and cook 3-4 minutes, breaking up the chorizo until browned.
- 3. Stir in half the garlic, 1 teaspoon paprika, turmeric, and cauliflower rice, pour in the chicken broth, bring to a boil, and cook 3-5 minutes, stirring occasionally, until rice is tender and liquid evaporates.
- 4. Make the aioli by mixing mayonnaise with remaining garlic and adding water one teaspoon at a time until drizzle consistency; season with salt and pepper.
- 5. Pat shrimp dry, season with 1 teaspoon paprika, salt, and pepper, then cook in 1 tablespoon hot olive oil over high heat for 3-4 minutes until pink and opaque (add calamari if using).
- 6. Turn off heat under the cauliflower mixture, stir well, top with shrimp (and calamari), season with salt and pepper, and garnish with parsley and aioli drizzle before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
