- ⅓ cup pecan halves, divided
- 3 tbsp butter
- 1 ½ tbsp Swerve Brown
- 1 ½ tbsp Bocha Sweet
- ¼ tsp caramel extract (or vanilla extract)
- 1 large egg

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat your oven to 325F and set aside 6 to 8 pecan halves, then chop the remaining pecans.
- 2. In a medium saucepan over low heat, melt the butter with both sweeteners while whisking until dissolved, about 3 minutes.
- 3. Remove from heat and whisk in the egg and caramel extract, then stir in the chopped pecans.
- 4. Pour the mixture into one 8-ounce ramekin or two 4-ounce ramekins and arrange the reserved pecan halves on top.
- 5. Place ramekins on a cookie sheet and bake 20 to 25 minutes, until the edges are set but the center still wobbles.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Cool at least 15 minutes before serving with whipped cream or keto ice cream.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
