What you need

6 servings- 1 lb ground beef
- 1 small yellow onion (finely diced (70g))
- 2 tbsp taco seasoning (or more, to taste)
- ⅔ cup water (160 ml, or beef stock)
- ½ cup red bell pepper (diced (74g))
- 1 tin chopped tomatoes (400g / 14oz)
- ½ cup sour cream (120g)
- 1 cup cheddar cheese (shredded (113g))
- 1 - 2 diced green jalapeño chilli (optional (14g))
- 1 tbsp chilli powder (I used mild)
- ¾ tsp paprika
- 1 tsp cumin
- ¼ tsp garlic powder
- ¼ tsp dried onion powder
- ¼ tsp oregano
- ¾ tsp salt
- ½ tsp black pepper
- 2 medium spring onions / scallions ((30g))
- 10 black olives (sliced (30g))
- 6 cherry tomatoes (diced or salsa (65g))
- 2 tbsp chopped coriander ((8g))
- 1 avocado ((200g))

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 1. Preheat your oven to 350°F.
- 2. Combine the taco seasoning spices (chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt, and pepper) in a small bowl.
- 3. Heat olive oil in a cast iron skillet or frying pan and cook the diced onion and ground beef for 4-5 minutes, breaking up the meat until browned.
- 4. Stir in the bell peppers, 2 tablespoons of taco seasoning, chopped tomatoes, and water or stock, then bring to a boil.
- 5. Reduce to a simmer and cook about 7 minutes, stirring occasionally, until the mixture thickens.
- 6. Transfer to an oven-safe dish if needed, spread sour cream over the beef, and top with shredded cheddar.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 7. Bake uncovered for 25-30 minutes until the cheese melts, then cool slightly and add your choice of garnishes.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
