- 1 pound broccoli florets (about two big heads and stalks cut and trimmed)
- ¼ pound bacon
- ½ bunch green onion
- 1 cup mayonnaise
- 2 tablespoons white vinegar
- 3 tablespoons Swerve (or powdered erythritol or stevia glycerite to taste)
- 1 teaspoon toasted sesame oil
- ¼ cup dried cranberries, raisins, dried currents, gogi berries, chopped walnuts, slivered almonds, pumpkin seeds or sunflower seeds.

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Cook the bacon until crispy, then drain and crumble into small pieces.
- 2. Cut the broccoli into bite-sized florets and trim away tough stems.
- 3. Slice the green onions into thin rounds.
- 4. Whisk together the mayonnaise, white vinegar, sweetener, and toasted sesame oil until smooth.
- 5. Just before serving, combine the broccoli, bacon, and scallions in a large bowl, toss with the dressing, and top with your choice of dried cranberries, nuts, or seeds.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
