- 4 chicken breasts (6 ounces each)
- salt and pepper
- ½ cup mayonnaise
- 3 tablespoons yellow mustard (or Dijon or a combo)
- 1-2 tablespoon low carb powdered sugar ((powdered sugar if not low carb))
- ¾ cup crushed pork rinds ((35 g) (panko crumbs if not low carb))
- ¾ cup grated Parmesan cheese ((60 g))
- 2 teaspoons granulated garilc
- 1 teaspoon granulated onion
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 8 pieces deli ham (thin slices) ((about 6 oz))
- 4 slices Swiss cheese ((4 oz))

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 350 degrees with the rack in the middle position, crush the pork rinds until fine, and prepare a 9x13 inch baking dish.
- 2. Pat the chicken dry, season both sides with salt and pepper, then whisk together the mayonnaise, mustard, and sweetener in a bowl, reserving most of the mixture for dipping and using 1/4 cup to coat the chicken.
- 3. Combine the crushed pork rinds, Parmesan cheese, granulated garlic, granulated onion, salt, and pepper, then sprinkle half this mixture into the bottom of your baking dish.
- 4. Arrange the coated chicken breasts on top of the crumbs and cover them with the remaining crumb mixture.
- 5. Bake for 30-40 minutes until the chicken is fully cooked through, then remove from the oven and top each breast with 2 slices of ham and 1 slice of Swiss cheese.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 6. Return the dish to the oven just until the cheese melts, then serve with the reserved mustard sauce.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
