6 servings- 6 chicken thighs (bone in skin on)
- 2 tsp Italian seasoning
- Salt and pepper
- 2 tbsp olive oil or avocado oil
- 4 cloves garlic (minced)
- ⅓ cup chicken broth
- ⅔ cup heavy whipping cream
- 1 ounce Parmesan cheese (finely grated )
- 6 ounces artichoke hearts (drained and chopped)
- 5 ounces frozen spinach (thawed and squeezed dry)

Cook until the thickest piece reaches 165F and the juices run clear.
- 1. Preheat the oven to 350 degrees F, pat the chicken thighs dry, and season all over with Italian seasoning, salt, and pepper.
- 2. Heat the oil in a large ovenproof skillet over medium heat, add the chicken skin-side down, and cook undisturbed for 3 to 4 minutes until golden, then flip and cook another 4 minutes before transferring to a plate.
- 3. Sauté the garlic in the same pan for about 1 minute until fragrant, then deglaze with the broth, scraping up browned bits, and bring to a simmer.
- 4. Stir in the cream and Parmesan, cooking until slightly thickened (another minute or two), then mix in the chopped artichokes and squeezed-dry spinach.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Place the chicken thighs on top of the cream sauce and bake for 20 to 25 minutes until the chicken is cooked through and the sauce bubbles.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
