- 2 pounds fresh pork sausage
- 2 tablespoons chili powder
- 1 tablespoon + 1 teaspoon ground cumin
- 1 tablespoon granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon sweet paprika
- 1 teaspoon onion powder
- ¾ teaspoon salt
- 1 teaspoon ground coriander
- ½ teaspoon dried oregano (rubbed)
- ½ teaspoon dried thyme (rubbed)
- ½ teaspoon cinnamon
- ½ teaspoon white pepper
- ½ teaspoon black pepper
- ½ teaspoon chipotle chile powder (or more)
- ¼ teaspoon ground clove
- ¼ teaspoon cayenne pepper (or more)
- ¼ teaspoon ground bay leaf (or sage)
- ¼ cup vinegar (red wine or cider is my preference)

Cook pork to 145F, then rest it for 3 minutes before slicing.
- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Place the fresh pork sausage in a large mixing bowl and pour the vinegar over it, then blend thoroughly using a hand mixer until combined.
- 2. Combine all dry spices in a separate bowl, mixing well to create an even seasoning blend.
- 3. Sprinkle the spice mixture over the vinegar-mixed pork and use the hand mixer to incorporate everything evenly throughout the meat.
- 4. Portion the seasoned meat into 1/2 pound servings (or 1/4 pound if preferred) and form into patties.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 5. Wrap portions individually and freeze any you won't use immediately; refrigerated chorizo will keep for up to 5 days before cooking.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
