Cooking cue
Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Pat the chicken breasts dry with paper towels and season all over with salt, pepper, thyme, oregano, rosemary, and parsley.
- 2. Heat the olive oil in a large skillet over medium-high heat, add the chicken in a single layer, and sear for 4-8 minutes per side until golden and just cooked through, reducing heat to medium if browning too quickly. Transfer to a plate and cover to keep warm.
- 3. Add the butter and chicken broth to the skillet, scraping the bottom with a wooden spoon to deglaze as the butter melts.
- 4. Reduce the heat to low, add the minced garlic, and sauté for about 1 minute until fragrant.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Return the chicken to the pan, flipping once or twice to coat in the sauce, and heat for 1-2 minutes if needed until warm. Serve with the pan juices spooned over the top.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
