- 2 cups part-skim shredded mozzarella cheese
- 2 ouces cream cheese
- 2 cups almond flour
- 1 tbsp baking powder
- ⅛ tsp salt
- 3 large eggs
- 1-2 tbsp olive oil dipping sauce (below)
- ⅔ cup Carapelli® Organic Extra Virgin Olive Oil
- 2 tbsp grated Parmesan Cheese
- 1 tbsp fresh minced parsely
- 2 tsp fresh minced rosemary
- 1 ½ tsp dried Italian Seasoning
- ¼ tsp red pepper flakes
- ⅛ tsp salt
- ⅛ tsp pepper

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 400°F with rack in the center, trace and cut parchment to fit a quarter sheet pan (about 9x13 inches), oil the pan completely, and place parchment inside.
- 2. Process mozzarella, cream cheese, almond flour, baking powder, salt, and eggs in a food processor until a sticky dough forms.
- 3. Transfer dough to the pan and use oiled fingers to distribute it evenly, then cover with lightly oiled waxed paper and gently press to spread, dimpling the surface with your fingertips and drizzling a few spoonfuls of the dipping sauce over top.
- 4. Place pan in oven, add 5-6 ice cubes to the oven bottom for steam, and bake 12-18 minutes until lightly browned on top.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Cool in the pan for 10 minutes before transferring to a rack, then cut into 12 pieces and serve with the remaining dipping sauce (combine all sauce ingredients in a jar and let sit overnight for best flavor).
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
