- 1 lb fresh green beans
- 1 small sweet white onion, cut in half crosswise, then into slivers the same size as the beans (see notes)
- ½ cup pitted Kalamata Olives, cut in half (see notes)
- 1 C crumbled Feta cheese
- 3 T white balsamic vinegar (see notes)
- 2 T extra-virgin olive oil
- 2 tsp fresh lemon juice (see notes)
- 2 tsp Dijon mustard
- 1 tsp dried oregano
- 1 tsp Greek seasoning
- fresh-ground black pepper to taste

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Trim the ends from the green beans, then cut them into 2-inch pieces.
- 2. Steam the bean pieces for about 5 minutes until barely tender-crisp, then immediately plunge into ice water to stop the cooking process.
- 3. Drain the beans thoroughly in a colander while you slice the onion into thin strips and halve the olives.
- 4. Whisk together the white balsamic vinegar, olive oil, lemon juice, Dijon mustard, dried oregano, Greek seasoning, and black pepper to create the dressing.
- 5. Combine the drained beans, sliced onions, and halved olives in a bowl, pour the dressing over everything, and toss to coat evenly.
- 6. Gently fold in the crumbled feta cheese just before serving.
- 7. For best flavor development, chill the salad for several hours before adding the feta, though it's delicious served immediately.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
