- 1 whole Lemon
- 4 cloves Garlic
- 1 head Romaine
- 1 whole Cucumber
- 1 whole Tomato
- ¾ cup Greek yogurt
- 2 tbsp Tahini

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the grill to medium-high heat, about 400F, and oil the grates so the food releases cleanly.
- Marinate the chicken with olive oil, lemon, cumin, coriander, paprika, garlic, salt, and pepper.
- Grill until charred and cooked through, then rest and slice.
- Cook until the thickest piece reaches 165F and the juices run clear.
- Serve over chopped greens with cucumber, tomato, pickled onion, and tahini yogurt sauce.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
