- 1 T oil for oiling grill grates
- lemon pieces for serving fish (optional)
- 1 T lemon zest (more or less to taste)
- 3 T fresh squeezed lemon juice
- 1 tsp Dijon mustard
- ¼ cup extra virgin olive oil
- 1 T capers, chopped (or more if you really like capers)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- ½ tsp fresh ground black pepper

Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- 1. Thaw frozen fish overnight in the refrigerator (or in cold water if pressed for time), then drain and press between paper towels to remove excess moisture.
- 2. Zest and juice the lemon, chop the capers, then whisk together with Dijon, olive oil, garlic powder, onion powder, dried parsley, and black pepper.
- 3. Place fish in a small Ziploc bag, pour in the marinade, and refrigerate for 1-2 hours—no longer or the lemon will begin cooking the fish.
- 4. Drain the fish, discard marinade, and let the fillets come to room temperature while you oil and preheat the grill to high.
- 5. Reduce heat to medium-high, place fish at an angle on the grates, and cook 2-3 minutes until grill marks form.
- 6. Rotate fish to create crosshatch marks and cook another 2-3 minutes, then flip and cook 2-3 minutes on the other side until firm but not hard—about 9 minutes total.
- Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- 7. Serve hot with additional lemon wedges on the side.
