8 servings- 4 cups zucchini (unpeeled and shredded)
- ½ teaspoon salt
- 2 large eggs
- 1 cup pepper jack cheese (shredded and divided)
- 2 cup cheddar cheese (shredded and divided)
- 2 pounds ground beef 80/20
- 1 recipe taco seasoning mix ((or, 1 store-bought packet))
- 1 cup sour cream
- ½ cup salsa
- Optional: taco toppings such as shredded lettuce (diced tomato, green onion, olives and sliced avocado)

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 1. Preheat your oven to 400°F and lightly grease a 13x9-inch baking dish.
- 2. Toss shredded zucchini with salt in a colander and let stand 10-15 minutes, then squeeze out all excess moisture.
- 3. Mix the drained zucchini with eggs, half the cheddar, and half the pepper jack cheese, then press into the prepared dish and bake for 20 minutes.
- 4. While the crust bakes, brown the ground beef over medium-high heat, drain the fat, then stir in taco seasoning and ¾ cup water and cook until absorbed.
- 5. Mix sour cream and salsa into the cooked beef until well combined.
- 6. Spread the beef mixture evenly over the baked zucchini crust and top with the remaining cheeses.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 7. Return to the oven and bake approximately 20 minutes until the cheese is bubbly.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
