- 10 ounces ham, chopped
- 4 ounces shallots, thinly sliced
- 4 ounces onion, thinly sliced
- 5 ounces fresh arugula
- 2 tablespoons oil
- ½ teaspoon Garlic and Herb Seasoning Blend
- 1 pinch nutmeg
- 2 cups heavy cream
- 8 large eggs
- 4 ounces havarti cheese
- 4 ounces Gouda cheese
- 1 medium tomato, (seeded and sliced thinly into rounds)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Combine almond flour and 2 teaspoons garlic-herb seasoning in a bowl, then mix in 2 beaten eggs to form dough; refrigerate until needed.
- 2. Line a 9-inch springform pan with parchment, roll chilled dough between parchment sheets, and press into bottom and up sides of pan to about 3/4 inch from top; refrigerate the prepared crust.
- 3. Preheat oven to 350°F with rack in lower third. Sauté sliced onions and shallots in 1 tablespoon oil with 1/2 cup water until soft and beginning to brown, then add arugula and cook until wilted; transfer to large bowl.
- 4. Brown chopped ham in 1 tablespoon oil and add to onion-arugula mixture; let cool slightly.
- 5. Whisk together heavy cream, 8 eggs, 1/2 teaspoon garlic-herb seasoning, pinch of nutmeg, and most of the grated havarti and gouda (reserve 1/4 for topping); combine with ham-vegetable mixture and pour into prepared crust.
- 6. Arrange seeded tomato rounds on top, sprinkle with reserved cheese, and bake for almost 1 hour until barely a wiggle remains in the center and top is nicely browned.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Cool quiche for 30 minutes before removing springform sides, then slice and serve.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
