- 3 cups cooked chicken breast ((cut into ½" cubes))
- 1 cup celery sliced
- 3 ounces water chestnuts ((sliced then roughly chopped))
- 1½ cups seedless grapes
- 1 cup chopped macadamia nuts or slivered almonds ((sliced almonds are fine too))
- 1 (20-ounce) can pineapple chunks or tidbits (no added sugar) (drained)
- ½ cup unsweetened coconut flakes (toasted (reserve 1 tablespoon for garnish))
- 1½ cups mayonnaise
- ½ cup coconut milk ((canned variety))
- ½ tablespoon curry powder
- ½ tablespoon soy sauce ((tamari, or coconut aminos))
- juice of half a lemon

Cook until the thickest piece reaches 165F and the juices run clear.
- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. In a large bowl, toss together the cubed chicken, celery, water chestnuts, grapes, pineapple chunks, macadamia nuts, and most of the toasted coconut flakes, reserving some nuts and coconut for garnish.
- 2. In a separate bowl, whisk together the mayonnaise, coconut milk, curry powder, soy sauce, and lemon juice until well blended.
- 3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
- 4. Cover and refrigerate for 8 hours or overnight to allow the flavors to meld.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Just before serving, garnish with the reserved coconut flakes and nuts.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
