- 160 g dry shiitake mushrooms ((see notes for fresh shiitake))
- 1 cup finely chopped cooked chicken (or turkey)
- 1 tbsp onion powder
- ½ tbsp garlic granule
- 1 tbsp coarse sea salt
- 3 tbsp nutritional yeast
- 3 ½ tbsp extra virgin olive oil

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 350°F (or 325°F if using convection).
- 2. Pulverize the dried shiitake mushrooms in a high-speed blender for 30 to 40 seconds until powdery, then let the dust settle for 2 to 3 minutes before opening.
- 3. Process the cooked chicken in a food processor until finely crumbled, then spread on a parchment-lined sheet pan.
- 4. Mix the mushroom powder, onion powder, garlic granules, salt, and nutritional yeast with the chicken, drizzle with olive oil, and toss to coat evenly.
- 5. Bake on the middle rack for 10 minutes, then remove, fluff with a fork, reduce the oven to 325°F (or 300°F convection), and bake 10 minutes more.
- 6. Cool slightly, then blend the mixture in the food processor for 1 to 2 minutes until it becomes a fine powder.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 7. Let cool completely before transferring to an airtight container; refrigerate up to 1 month or freeze in portions up to 3 months.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
