- 1 ¾ cups almond flour
- ⅔ cup Swerve Sweetener
- ⅓ cup unflavoured whey protein powder
- ¼ cup coconut flour
- 2 tsp baking powder
- ½ tsp salt
- 3 large eggs
- ½ cup melted butter
- 1 ½ tsp banana extract ((imitation would also be fine))
- ½ tsp vanilla extract
- ½ cup water
- ⅓ cup dark chocolate chips, sugar-free

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat your oven to 350°F and thoroughly grease an 8x4 inch loaf pan, optionally lining it with greased parchment paper.
- 2. Grind the chia seeds to a powder, mix with 2/3 cup water, and set aside to gel.
- 3. Whisk together the almond flour, sweetener, protein powder, coconut flour, baking powder, and salt in a large bowl.
- 4. Stir in the eggs, melted butter, chia mixture, banana extract, and vanilla extract until combined, then add 1/2 cup water to achieve a scoopable batter, adding more water by the tablespoon if needed.
- 5. Fold in most of the chocolate chips, spread the batter into the prepared pan, and top with the remaining chips.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Bake for 60 to 75 minutes until golden and the top feels just firm to the touch, then cool in the pan for 20 minutes before running a knife around the edges and cooling completely in the pan.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
