- 3 ½ cups shredded mozzarella cheese, plus ½ cup for topping
- 1 ½ cups almond flour
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum
- ½ teaspoon salt
- 2 tablespoons keto bbq sauce
- 1 cup sugar free pulled pork
- ¼ cup crumbled blue cheese
- 2 tablespoons sliced red onion
- 2 tablespoons chopped green onion
- 1 tablespoon cilantro

Cook pork to 145F, then rest it for 3 minutes before slicing.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 400 degrees and melt 3½ cups mozzarella in the microwave for about 2 minutes, stirring until smooth, then let cool slightly.
- 2. Whisk together almond flour, baking powder, xanthan gum, and salt in a separate bowl.
- 3. Beat the egg into the melted cheese with an electric mixer, then gradually incorporate the dry ingredients until a uniform dough forms (you may knead by hand if needed).
- 4. Knead the dough briefly on a lightly floured surface, then roll it between two sheets of parchment to your desired thickness and transfer to a baking sheet.
- 5. Spread the BBQ sauce over the dough, then layer on the pulled pork, remaining ½ cup mozzarella, blue cheese, red onion, green onion, and cilantro.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 6. Bake at 400 degrees for 12-15 minutes until the cheese is bubbly and beginning to brown.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
