- ⅓ cup coconut flour
- 2 tablespoons whole psyllium husk
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 6 tablespoons frozen unsalted butter
- ½ cup heavy whipping cream
- ¼ cup sour cream
- 2 tablespoons butter, melted
- 1 tablespoon butter
- 1 pound pork breakfast sausage or ground pork
- ½ cup chopped onion
- ½ teaspoon xanthan gum
- 1 cup heavy whipping cream
- 1 cup chicken broth

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat oven to 400 degrees and whisk together almond flour, coconut flour, psyllium husk, baking powder, salt, and baking soda in a medium bowl.
- 2. Grate the frozen butter into the dry ingredients using a cheese grater, stir gently, then mix in the whipping cream and sour cream until just combined.
- 3. On parchment paper, shape the dough into a 1-inch-tall rectangle, fold it in half, press back to 1 inch tall, and repeat this folding process four more times to create layers, then cut into 6 squares, brush with melted butter, and bake on a parchment-lined tray for 10 minutes.
- 4. Let the biscuits rest on the tray for 5 minutes, then transfer carefully to a wire rack to cool completely.
- 5. While biscuits bake, melt 1 tablespoon butter in a large skillet over medium heat, add the sausage, and cook about 5 minutes until no longer pink, breaking it into small pieces.
- 6. Stir in the chopped onion and cook until soft, then add xanthan gum and cook 30 seconds, gradually whisk in the heavy cream until thickened, then whisk in the chicken broth and simmer 2-3 minutes until the gravy thickens; season with salt and pepper to taste.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 7. Place a biscuit on each plate, ladle the sausage gravy over top, and serve immediately.
