- 4 ounces cream cheese
- ¼ cup chopped onion
- 3 cloves garlic (minced)
- 4 cups chicken broth
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp red pepper flakes
- 8 ounces shredded Cheddar chese
- ½ cup frozen spinach

Cook until the thickest piece reaches 165F and the juices run clear.
- 1. Combine the broccoli, cream cheese, onion, garlic, chicken broth, salt, pepper, and red pepper flakes in your slow cooker.
- 2. Cover and cook on high for 2 hours or on low for 4 hours until the broccoli is very tender.
- 3. Stir in the shredded cheddar and frozen spinach until the cheese melts completely.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 4. Use an immersion blender to purée the soup until smooth, or leave it slightly chunky if you prefer more texture, then adjust seasoning to taste before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
