- 2 tbsp coconut flour
- ¾ tsp salt
- ½ tsp xanthan gum
- ½ tsp garlic powder
- ¼ to ½ tsp cayenne (optional, adds a nice kick)
- ½ cup butter (cut into pieces and softened)
- 4 ounces sharp Cheddar (grated, room temperature)
- 1 egg yolk (room temperature)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 300°F and line two baking sheets with silicone mats or parchment paper.
- 2. Pulse almond flour, coconut flour, salt, xanthan gum, garlic powder, and cayenne (if using) in a food processor to combine.
- 3. Add softened butter pieces, grated room-temperature cheddar, and egg yolk to the processor; pulse until dough forms a cohesive ball.
- 4. Transfer dough to a piping bag fitted with an open star tip and pipe 3-inch lines onto prepared sheets, spacing them close together since they don't spread.
- 5. Bake for 20 to 25 minutes until just golden brown, then turn off oven and let straws rest inside for 5 more minutes, watching carefully to prevent over-browning.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Cool completely on the baking sheets before serving or storing.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
