What you need

5 servings- 1 tbsp olive oil
- 1 small onion (chopped (60g))
- 2 cloves garlic (minced)
- 1 ⅛ lb ground beef (500g)
- 6 small slices of thin cut streaky bacon (smoked or unsmoked, chopped (90g))
- 1 cup tinned chopped tomatoes (240g)
- 1 - 2 tbsp tomato puree
- 1 ½ tsp Dijon mustard
- 2 cups beef broth
- ½ tsp salt
- ¼ tsp cracked black pepper
- ⅓ cup cream cheese (80g)
- 1 ½ cup shredded cheddar or monterey jack cheese (170g)
- 3 tbsp chopped parsley
- ⅓ cup heavy cream (80g)
- ¼ cup chopped fresh cherry tomatoes (38g)

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Heat olive oil in a Dutch oven or soup pan, then cook chopped onion and minced garlic for 2 to 3 minutes until soft and translucent.
- 2. Add ground beef and chopped bacon, cooking for 4 to 6 minutes until browned, optionally draining excess fat if using high-fat beef.
- 3. Stir in chopped tomatoes, tomato puree, Dijon mustard, beef broth, salt, and pepper, bring to a boil, then reduce to a simmer and cook about 15 minutes until thickened.
- 4. Add cream cheese, 1¼ cups shredded cheddar, and 2 tablespoons parsley, stirring until cheese melts, then stir in heavy cream and remove from heat, adjusting seasoning to taste.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 5. Serve in bowls topped with remaining ¼ cup cheese and a mixture of chopped fresh cherry tomatoes and remaining parsley.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
