- 4 tablespoons butter
- ½ leek, sliced
- 4 celery stalks, chopped
- ½ onion, chopped
- ¼ cup chopped carrots (optional)
- 3 cups cooked shredded chicken
- 1 zucchini, cut into half moons
- 32 oz chicken broth
- ½ to 1 teaspoon of salt, to taste
- 1 cup almond flour
- ½ cup unflavored whey protein powder
- 1 ¼ teaspoon baking powder
- 1 teaspoon xanthan gum
- ½ teaspoon salt
- ¼ teaspoon onion powder
- ½ cup hot boiling water

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Melt the butter in a large stockpot over medium heat, then add the leek, celery, onion, and carrots, cooking until softened.
- 2. Stir in the shredded chicken, zucchini, and chicken broth, bring to a boil, then reduce to a simmer and season with salt and pepper.
- 3. While the soup simmers, whisk together the almond flour, whey protein powder, baking powder, xanthan gum, salt, and onion powder in a small bowl.
- 4. Pour the hot boiling water into the dry mixture and stir with a spatula until just combined.
- 5. With wet hands, form the dough into 6-8 balls and place them evenly on top of the simmering soup.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 6. Cover the pot and simmer on low for 10 minutes, then remove from heat and serve.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
