- 2 medium Carrots ((diced or sliced thinly; ~1 cup))
- 2 stalks Celery ((sliced thinly; ~1 cup))
- 1 medium Onion ((diced; ~1 cup))
- 1 lb Boneless skinless chicken breasts
- 10 cups Chicken broth, reduced sodium
- 1 tbsp Italian seasoning
- 1 medium Bay leaf ((whole))
- ¾ tsp Sea salt ((to taste))
- ¼ tsp Black pepper ((to taste))
- 1 medium Spaghetti squash ((you’ll cook the whole thing, but the soup only needs half))

Cook until the thickest piece reaches 165F and the juices run clear.
- 1. Heat olive oil in a large Dutch oven over medium heat, then sauté diced carrots, celery, and onions for about 5 minutes until the onions turn translucent.
- 2. Add chicken breasts, chicken broth, Italian seasoning, and bay leaf, then bring to a boil before reducing heat to simmer covered for 1 hour (if using raw chicken, remove after 30 minutes to shred, then return to the pot).
- 3. While the soup simmers, preheat your oven to 375 degrees F, poke holes in the spaghetti squash with a knife, and bake on a sheet for 40-60 minutes until a fork pierces the skin with slight resistance.
- 4. Once the squash is cool enough to handle, halve it and use a fork to scrape out the strands crosswise.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Remove the bay leaf from the soup, stir in about 3 cups of the spaghetti squash noodles (half the squash), and season with salt and pepper to taste.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
