- 1 ½ cup ground pork rinds, divided
- ⅓ cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 egg

- Preheat the air fryer to 390F while you prep the ingredients so the first batch starts crisp.
- 1. Pat the chicken strips completely dry with paper towels and season lightly with salt and pepper, then set aside.
- 2. In one shallow bowl, combine 1 cup ground pork rinds with the almond flour, garlic powder, onion powder, salt, and pepper; place the remaining ½ cup pork rinds in a separate bowl.
- 3. Whisk the egg with 2 tablespoons of water in another bowl.
- 4. Coat a few chicken strips at a time in the almond flour mixture, then dip in the egg wash, and return to the almond flour mixture for a second coating.
- 5. For maximum crispiness, dip the double-coated strips once more in egg wash and then into the bowl containing only ground pork rinds.
- 6. For air frying: arrange strips in a single layer in the basket, spray with oil, and cook at 350-360°F for 8-12 minutes until cooked through.
- 7. For pan frying: heat 2 cm of avocado oil in a skillet over medium heat until shimmering, then fry strips in batches for 3-5 minutes per side until golden and cooked through, draining on paper towels.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 8. For oven baking: place breaded strips on a foil-lined baking sheet, spray with oil, and bake at 400°F for 15-20 minutes until fully cooked.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
