- ½ cup shredded mozzarella (57g (or use 1/4 cup mozzarella and 2 tbsp cream cheese), room temperature)
- 2 tbsp cocoa powder (10g, unsweetened)
- 3 tbsp almond flour (18g)
- ½ tsp baking powder
- 1 ½ tbsp powdered sweetener
- ¼ tsp vanilla extract

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Combine the egg, mozzarella, cocoa powder, almond flour, baking powder, sweetener, and vanilla in a small bowl and blend with an immersion blender until completely smooth.
- 2. Preheat your mini waffle maker and lightly brush the plates with oil.
- 3. Pour one-third of the batter into the center of the waffle iron, spreading it slightly, and cook for about 3 minutes until the chaffle sets and releases easily.
- 4. Crack open the lid and let the chaffle rest in the iron for 15 seconds to firm up, then carefully lift it out with a fork.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Transfer to a wire rack to cool completely and repeat with the remaining batter to make three chaffles total.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
