Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat oven to 350°F and combine almond flour, cocoa powder, sweetener, egg, melted butter, and vanilla in a bowl, then press the mixture into a 9x9 baking dish, prick with a fork, and bake for 13 minutes; cool completely.
- 2. Whip softened cream cheese briefly, then add sour cream, heavy cream, sweetener, and vanilla, beating until smooth, and spread over the cooled crust; refrigerate for at least 1 hour until firm.
- 3. Spread the prepared chocolate pudding over the chilled cheesecake layer and return to the refrigerator while making the topping.
- 4. Whip heavy cream to soft peaks, then mix in room-temperature cream cheese, vanilla, and sweetener until just combined (do not overmix).
- 5. Spread the whipped cream over the pudding layer and chill for 1-2 hours or overnight until fully set and firm enough to slice cleanly.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Top with grated sugar-free chocolate or cocoa powder before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
