- 11 ounces Mozzarella Cheese (shredded)
- 4 tablespoons Cream Cheese
- 2 tablespoons Unsalted Butter
- 2 teaspoons Dried Yeast
- 2 tablespoons Warm Water
- 5 ½ ounces Almond Flour
- 3 ounces Erythritol
- 2 teaspoons Xanthan Gum
- ½ teaspoon Cinnamon (ground)
- ½ teaspoon Allspice (ground)
- ¼ teaspoon Nutmeg (ground)
- 2 large Eggs
- ½ cup Powdered Erythritol
- 1 tablespoon Unsalted Butter (melted)
- 2-3 tablespoons Hot Water

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 355°F and bloom the yeast by sprinkling it over warm water in a small bowl; let sit for a minute.
- 2. Melt mozzarella, cream cheese, and butter together in a microwave or on the stove until completely smooth.
- 3. Mix almond flour, erythritol, xanthan gum, and spices in a stand mixer, add the yeast mixture and eggs, then pour in the melted cheese and mix until thoroughly combined, scraping down the sides as needed.
- 4. Divide dough into 12 balls, let rest 2 minutes, then roll each into a long rope and twist into pretzel shapes (use a plastic cutting board if dough is sticky).
- 5. Place pretzels on a lined baking sheet with space between them and bake 12-20 minutes until golden brown on tops and bottoms.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Cool for at least 15 minutes, then whisk powdered erythritol with melted butter and add hot water gradually until pourable; drizzle glaze over pretzels and let set before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
