- 1 ½ cups Coconut Milk (full fat)
- ½ cup Erythritol
- ⅓ cup Coconut Flour
- 2 large Eggs
- 1 teaspoon Vanilla Essence

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 350°F and line a large baking sheet with parchment.
- 2. Combine the desiccated coconut, full-fat coconut milk, erythritol, coconut flour, eggs, and vanilla in a large bowl, stirring until you have a thick, uniform batter.
- 3. Using a small cookie scoop, portion the batter onto your lined sheet.
- 4. Bake for 15-20 minutes until the macaroons turn lightly golden brown.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Allow the cookies to cool completely on the tray before serving or storing in an airtight container.
