5 servings- 2 cups / 500 ml coconut cream (or heavy cream)
- 5 egg yolks (large)
- ⅓ cup / 40g powdered erythritol
- 1 vanilla bean pods (or 2 tsp vanilla extract)
- 2 tbsp Golden erythritol (such as Swerve Brown or Lakanto Gold)

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Halve the vanilla bean lengthwise and scrape the seeds into a mixing bowl; warm the coconut cream with the empty pod in a saucepan over medium heat until it just begins to simmer, then remove from heat and cool 15 minutes (stir in vanilla extract now if using instead of the bean).
- 2. Beat the egg yolks with the powdered erythritol and vanilla seeds using an electric mixer for 2-3 minutes until pale, frothy, and doubled in volume.
- 3. Gradually whisk the lukewarm cream into the yolk mixture using a balloon whisk, blending until smooth.
- 4. Heat your oven to 325°F, then pour custard into ramekins filling them just over three-quarters full and set them in a casserole dish; add boiled water to the dish until it reaches halfway up the sides of the ramekins.
- 5. Bake approximately 40 minutes until the tops turn golden and the centers still jiggle slightly, then remove and cool to room temperature before refrigerating for at least 2 hours or overnight.
- 6. Dust the chilled custards with golden erythritol and caramelize with a kitchen torch, or broil on the top oven rack for about 2 minutes watching closely to prevent burning.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Let the topping harden in the refrigerator for 10 minutes before serving; do not touch the hot sugar until fully set.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
