- 1 ½ cup mozzarella, shredded (170g / 6oz)
- 2 tbsp cream cheese (full fat, 30g)
- 1 egg (large, whisked, room temperature)
- ½ cup almond flour (ground almonds, 50g, use 1 tbsp less for super-fine almond flour)
- 2 tbsp coconut flour (level, 16g)
- 2 tbsp powdered sweetener (I used Bocha Sweet)
- 1 ½ tsp baking powder
- ½ tsp dried active yeast (optional, for flavour)
- 1 tbsp butter (melted, for brushing the tops (optional))

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 350°F (or 320°F convection) and prepare a baking sheet with parchment.
- 2. Warm the mozzarella and cream cheese together in the microwave for about 1 minute or in a pan over gentle heat until melted but not bubbling.
- 3. Whisk together the almond flour, coconut flour, baking powder, sweetener, and yeast in a separate bowl.
- 4. Combine the melted cheese mixture with the dry ingredients and the whisked egg, mixing first with a fork then kneading by hand into a smooth dough ball.
- 5. Roll the dough between two parchment sheets to about 1/4 inch thickness, then cut into 3 rectangles and divide each into 2 long triangles for 6 total pieces.
- 6. Shape each triangle to roughly 19 cm in length, then roll from the wide end toward the point to form a crescent and arrange on the baking sheet; brush with melted butter if desired.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Bake for 20 minutes until golden and puffed, loosely covering with foil after 13-14 minutes to prevent over-browning.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
