- 1 large egg
- ¼ cup sour cream
- ¼ teaspoon xanthan gum

- 2 tablespoons butter (melted)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 350 degrees and prepare a parchment-lined baking sheet.
- 2. Place 2 ounces cream cheese and 1 1/2 cups shredded mozzarella in a microwave-safe bowl, heating in 30-second intervals until completely melted and well combined.
- 3. Transfer the melted cheese to a mixing bowl and add 1 1/4 cups almond flour, 1 teaspoon baking powder, 1 egg, 1/4 cup sour cream, 1/4 teaspoon xanthan gum, and a pinch of salt.
- 4. Blend on high speed until a uniform dough forms, then wet your hands slightly and shape the dough into 8 separate rolls.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Bake on the prepared sheet for 20 minutes, then brush the tops with 2 tablespoons melted butter while still hot.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
